Sweet Chilli Cod with Tomatoes
Put a handful each of chopped spring onion, small cauliflower &
broccoli florets, sliced green beans & yellow pepper in a microwavable dish
with 1 tsp oil. Cover & microwave for 4 mins. Stir in 1 tbsp plain flour, microwave 1 min.
Add 1 tsp each lazy garlic & lazy chillies, a quarter can of chopped
tomatoes, 1 tbsp tomato puree, 1 tbsp sweet chilli sauce, 2 tbsp fish sauce, quarter
cup of chicken stock & microwave 1 min.
Add skinned & 2” cubed cod fillet & 1 quartered salad tomato then microwave 8 mins. If you want a more filling meal stir in a
handful of Tildas microwavable Sun Dried Tomato rice & cook 1 min before cooking end time. Add parsley to serve. This dish can be varied
with any white fish or use left-over meat.

Chinese Turkey Strips with Noodles
Cut the following into fine strips to ensure even
cooking: 1 turkey or chicken breast fillet, 1 red pepper, 1 large flat
mushroom, handful green beans.
Put into microwaveable dish. Add
4 cherry tomatoes, 1tbsp each of soy
sauce, vegetable oil & dry sherry. Season with white pepper. Cover with lid
or cling film & microwave for 4 mins.
Leave to stand for 5 mins whilst you make noodles - place a handful of noodles in boiling water,
bring back to boil, lower heat to simmer for 4 mins, drain. Add 1tbsp crème fraiche, natural yoghurt or
soured cream along with the drained cooked noodles to the turkey
mixture & coat well before serving.

Trout with Orange Butter Sauce
Place 25g(1oz)
butter in bowl & microwave for 30 seconds to melt. Add 1 small
chopped onion, cover & microwave for 2 mins. Stir in a handful
of chopped mushrooms, cover & microwave 1 min. Stir in fresh
breadcrumbs made from 2 slices bread (6 tbsp approx), 2 tbsp chopped
fresh parsley or dried, salt & pepper. Bind together by adding 1
beaten egg.
Place one trout
fillet into a shallow dish & a good layer of the above mixture,
then another trout fillet on top of this (serves 2 people). Cover &
cook for 5 mins, turn the dish & cook 4 mins. Leave to stand
covered whilst preparing orange butter sauce:
In jug melt
25g(1oz) butter & a pinch of castor sugar by microwaving 1 min.
Add 3 tbsp of tinned mandarin oranges or 1 orange thinly sliced, 8
tbsp orange juice & 1.5tbsp lemon juice then microwave 2 mins.
Spoon over trout & serve with fresh dill or parsley.
I serve with
curly kale & tinned new potatoes:
whilst fish is
cooking by using a steaming dish on top place a handful of curly kale
in steaming bowl, arrange tinned new potatoes on top of kale in the
middle; then cover the potatoes with more kale.

Mexican Beef
Place 1 sliced onion & carrot, 1
green & red chopped pepper & 1 diced potato in a microwave
bowl & cook 6 minutes. Stir in 25g butter until it melts. Stir
in 1tsp dried mixed herbs & dried parsley, half tsp chilli
powder & worcestershire sauce, 1 crushed garlic clove, 100g per
person topside beef cut into strips & salt/pepper to taste.
Cover & cook 4 minutes, stirring halfway through cooking time.
Stir in 2tbsp plain flour, 1 400g can chopped tomatoes & quarter
pt hot beef stock. Cover & cook 5 minutes, stirring halfway
through cooking time. Leave to stand covered for 5 minutes before
serving.

Spaghetti Bolognese in rich tomato sauce
In micro bowl add bacon pieces, 1 diced onion, 1tsp crushed garlic, 2 sticks diced celery & 1 grated carrot. Cover & cook 7 mins. Stir in 1tbsp wholemeal plain flour, 8oz minced beef, 4tbsp passata, 1 quartered beef tomato, 1tbsp tomato puree, cover & cook 3 mins.
Add half pt beef stock, handful diced mushrooms salt & pepper to taste & 2 tsp mixed herbs & a handful of washed baby spinach. Cover & cook 10 mins stirring half way through.
Cook spaghetti separately - 8oz in microwave bowl, pour on 1&half pts boiling water & 1 tbsp oil. Cook 10 mins. Drain. Reheat sauce if necessary. Spaghetti into the tomato sauce not sauce into spaghetti & mix well to coat. Sprinkle with parmesan cheese & top with paarsley.

Liver & Bean Casserole
Cut 350g lambs liver into half inch strips & coat with plain flour. Place 1tbsp oil into a microwavable dish and add 1 finely chopped onion. Shake off any excess flour & add the liver also. Microwave for 3 minutes. Add quarter pint of beef stock, 3 fl oz milk, 2tbsp tomato puree, 1 tsp mixed herbs. Microwave for 10 minutes. Add 4oz slice mushrooms & a can of kidney or corlotteli beans. Microwave 7 minutes. Serve with BOILED RICE (click to see my easy white rice recipe) or serve with mash potatoes& broccoli (also rich in iron).

Creamy Chicken Korma
Cut chicken breasts into 2inch cubes & place them in a bowl with 10tbsp natural yoghurt, 1tbsp crushed garlic, 1oz creamed coconut & 2tsp turmeric. Cover & refrigerate for 1 hour at least.
Place 1oz butter in a microwavable bowl & cook for 1 minute. Add 1 sliced onion & mirowave 1 minute, add 1tbsp grated ginger, half tsp chilli powder, 1tbsp coriander & microwave 1 minute.
Add chicken cubes & marinade & mix well. Add 5 whole cloves & 1tbsp cinnamon. Cover & microwave on high for 4 & a half minutes. Stir well, microwave on medium for 3 mins.
Blend 2tsp cornflour & 4oz single cream then stir into the chicken mixture. Microwave on high for 3 minutes.
