Liver & Bean Casserole

Cut 350g lambs liver into half inch strips & coat with plain flour. Place 1tbsp oil into a microwavable dish and add 1 finely chopped onion.  Shake off any excess flour & add the liver also.  Microwave for 3 minutes.  Add quarter pint of beef stock, 3 fl oz milk, 2tbsp tomato puree, 1 tsp mixed herbs.  Microwave for 10 minutes.  Add 4oz slice mushrooms & a can of kidney or corlotteli beans.  Microwave 7 minutes.  Serve with BOILED  RICE (click to see my  easy white rice recipe) or serve with mash potatoes& broccoli (also rich in iron).
